Cucumber Mojito with Vodka
4-5 slices SUNSET cucumber
4-5 sprigs fresh mint, leaves removed Ice
2 ounces Kirkland Signature vodka
1 1/2 tablespoons fresh limejuice
1 1/2 tablespoons simple syrup
11/2 ounces soda water
Cucumber wheel and fresh mint sprig, for garnish
Drop cucumber slices and mint leaves into a cocktail shaker. With a muddler, press the cucumber and mint to releasetheir flavors. Fill the shakerwith Ice. Add vodka, limejuice and simple syrup. Cap and shake vigorously. Add soda water.
Pour into a large glass. Garnish with a cucumber wheel on the rim of the glass and a mint sprig. Makes 1 serving.
Note: Simple syrup is available at bar supply stores. You can make it by combining 2 cups sugar with 2 cups water. Bring to a quick boil. Cool. Store, covered, in the refrigerator for up to 1 month.
